In an article published by the Forbes on May 20th titled "Why Olive Oil Is So Good For the Heart," the Proceedings of the National Academy of Sciences had favorable findings when they looked at the effects of a Mediterranean diet on heart health.  According to the article, when high fat food items like olive oil and nitrites and nitrates in greens are combined, a nitro fatty acid is created. This combination relaxes blood vessels and brings down blood pressure.

The findings of this study help to prove that a Mediterranean diet can reduce the risk of heart disease and heart attack. The diet can also reduce the risk of stroke and heart failure. The Mediterranean diet consists of vegetables, fruits, nuts, fish, oils, and whole grains.
