BOHEMIA, N.Y., June 3, 2014 /PRNewswire-iReach/ -- Flavor Your Life, a European Union funded campaign that is dedicated to providing the latest in olive oil news, shares a recipe for Tuscan Cipollata prepared with Italian olive oil that makes a delicious, easy dinner for you and your family.
This recipe calls for:
3½ cups thinly sliced red onion
2¼ cups pork ribs
1 chopped carrot
1 chopped stalk of celery
2 tbsp. Italian olive oil
¼ cup bacon
¼ cup sausage
Garlic to taste
8 slices of stale bread
Salt and pepper to taste
To prepare, chop one large carrot and one stalk of celery.
Next, place about 4½ cups of water in a large pan together with the pork ribs, the chopped carrot and chopped celery. Bring to a boil and cook until the meat easily comes off the bone. Let sit in the pot once finished you will need the stock later on.
In the meantime slice the onions and leave them to soak in water. Lightly fry the bacon and sausage in extra virgin olive oil. Once browned, add the onions and allow the mixture to dry slightly. Then add two ladles of the stock created with the pork ribs, bring it to a boil, and simmer (adding more stock as required).
Remove the pork ribs from the remaining stock and remove the bone. Add the meat with any remaining broth to the onions and serve in bowls poured over the bread slices. This should feed approximately four people.
