Extra virgin olive oil has become a widely used ingredient in cooking due to its decadent flavor and wide range of health benefits. The International Olive Oil Council (IOC) recognizes olive oil tasting as a profession. Tasters have a real passion and appreciation for authentic extra virgin olive oil.  Tasters are normally given a small, dark-colored glass that contains extra virgin olive oil.  A dark-colored glass is chosen so the color of the oil cannot be seen.  The taster captures the first impressions of the oil by swirling it around under the nose to capture the fragrances and aromas, which are then inhaled.

There is a technique called stripping -- a small amount of oil is sipped and held in the mouth between the lower lip and teeth, where it is then evaporated. This technique is used to help complete the profile of the tasting, leaving the taster with the task of interpreting and judging the sample submitted for evaluation. This technique is repeated by the taster for every sample of extra virgin olive oil when oils are being judged in a competition, or when they are being evaluated for the purpose of classification.
