Enjoy Herbs in Winter by Preserving Them with Olive Oil

August is primetime for vegetables and herbs to start coming out of a garden very quickly. Most plants have bloomed and blossomed for months, and now is the time to enjoy what consumers have grown with their own hands.

Whether an expert or a beginner, there may be more vegetables and herbs coming out of a garden than a family will use. This may not seem to be an issue, but there is, however, one problem that many face as the months start to turn cold: how to keep the extra vegetables and herbs fresh for winter.

One of the best ways to preserve fresh herbs like basil and oregano is to use olive oil. First, let the herbs thoroughly air-dry. Mix one cup of the herb with one cup of olive oil and then puree with ¼ teaspoon of salt. Refrigerate overnight (or six hours) and then stir the mix together. Now, for the rest of the winter season you can enjoy fresh herbs by simply adding a tablespoon of this mixture to any sauce or dish.
